recipe no.1: mini frittatas!

for my first recipe - mini egg frittatas with sausage, kale, & cheddar - i figured i would start where our day begins: breakfast! i found this recipe because alex & i both love having eggs in the morning, but i get bored of them really easily. i got this recipe from twopeasandtheirpod.com, and modified it a bit - so i'll give you my version here.

prep time: 10 min

cook time: 20 min

total time: 30 min

what you'll need:

  • 1/2 sleeve of bob evan's traditional ground sausage

  • 2 leaves kale

  • 5 egg whites

  • 1/4 cup half & half

  • salt and pepper

  • 1/4 cup shredded sharp cheddar cheese

what you'll do:

  1. preheat oven to 350 degrees f

  2. brown the sausage & cook all the way through

  3. use a mixing bowl and whisk together egg whites and eggs, then whisk in the milk, salt, & pepper

  4. stir the kale pieces into the egg mixture

  5. grease some muffin tin cups with pam spray - between 6-8 cups

  6. pour egg & kale mixture evenly into muffin tin cups, but only fill about halfway

  7. add sausage nuggets into each muffin tin

  8. top with cheddar

  9. pro tip: evenly distribute all ingredients to the best of your ability, and don't fill the muffin tin all the way otherwise your frittatas won't be so mini

  10. bake for about 20 minutes

i love these because if you don't finish them all in one go, you can store them in the fridge and just microwave them.
